      One of the objectives of the project “Fibers and Starches from tubers not yet commercialized industrially” was the development of yam flour in traditional flour mills in Caapiranga (AM, Brazil). The yam is an important symbol for this territory and it iss appreciation goes towards guaranteeing the Food Sovereignty of the Amazonian populations. Social Technology (TS) can be an important tool in extension work that aims to value and transform regional foods. The experience of the flour mill was systematized and evaluated, following steps that include contextualization, an account of the experience, a survey of reflections and conclusions guided by the pillars of a TS. Caapiranga has been facing difficulties related to yam production; the experience was guided by the existing technologies and knowledge of cassava flour production; adaptations were necessary to produce white and purple yam flours; issues such as interdisciplinarity, political relations, food culture and food safety are considered for the viability of this new technology. From the potentialities and limits indicated, it can be seen that the experience in question was important to show the possibility of producing yam flour, with some steps that could have greater popular participation to achieve better results. It is expected that the activities contribute to a greater appreciation of yam, its nutritional benefits and maintenance of the Caapiranga culture. ; El proyecto tuvo como objetivo desarrollar harina de ñame en molinos harineros tradicionales del municipio de Caapiranga (AM, Brasil).
