نبذة مختصرة : This research aimed to determine the levels of lead and cadmium, and as well as the sensory performance of 20 coffee brands from Jaén, Peru, in three presentations: ground roasted, spent grounds, and essence. Lead and cadmium levels were determined by absorption spectrophotometry and sensory performance through certified tasters. Analysis of variance was performed to detect significant differences between groups, and Tukey's test was applied used when such differences were found. The established levels were compared with the maximum permissible limits (MPLs) set by the European Union (Pb < 1.0 mg/kg, Cd < 0.05 mg/kg). The results revealed that Pb and Cd levels were below the MPLs samples. The inferential test indicated that the concentration of these metals in the essence was significantly lower than in ground roasted coffee and spent grounds. Regarding sensory quality, most of the brands evaluated exceeded 80% performance. This research provides evidence of the safety and quality of coffee marketed in Jaén, supporting its reputation in the national and international market. ; Esta investigación tuvo como objetivo determinar los niveles de plomo y cadmio y el rendimiento sensorial de 20 marcas de café de Jaén, Perú, en 3 presentaciones: tostado molido, borra y esencia. Estos niveles se determinaron por espectrofotometría de absorción y el rendimiento sensorial a través de catadores certificados. Se realizó un análisis de varianza para detectar diferencias significativas entre grupos y la prueba de Tukey cuando se encontraron diferencias. Los niveles se compararon con los límites de la Unión Europea (Pb < 1.0 mg/kg, Cd < 0.05 mg/kg).
