نبذة مختصرة : The traditional market is synonymous with a seedy, dirty and disorganized. Especially in the market that sells meat, lots of flies fluttering to the floor muddy and dirty. Among the traditional market are morning market and afternoon market. One of the merchandise sold in the market is the beef. Damage causes a decrease in the quality of fresh meat, mainly caused by microorganisms. One of bacterial microorganisms that can contaminate beef is Salmonella sp. Salmonella sp. can causes Salmonellosis. One of the manifestations in class typhoidal species known to many people as typhoid fever. In 2007, the CDC reported the prevalence of typhoid fever cases in Indonesia is around 358-810 per 100,000 people, with 64% between the ages of 3 to 19 years. For three consecutive years since 2007, Salmonella sp. encountered as a cause of food poisoning in Indonesia and likelihood of occurrence ranged from 12,5% to 25% of microbial contamination. The test results indicate that the presence of Salmonella on beef sold in markets in West Java province is 54,2%. Therefore, research related to contamination with Salmonella sp. within beef needs to be done on specific areas such as in the traditional markets. Type of research that used in this study is an analytic observational with cross sectional approach. This study is an analytical. Sampling method used in this study is cluster sampling. The research subjects were obtained as many as 32 samples. This research is collecting primary data via vendors information, isolation and identification test of Salmonella sp., and Total Plate Count (TPC) test. The variables studied were the duration of the merchants selling, the duration of storage of the meat, merchants hygiene, sanitation where the sale of meat, sanitary appliance merchants belong to, suspension of meat, types of butcher, types of markets, contamination of Salmonella sp., and non-specific microbial contamination. From the total 32 samples were tested, it was found 7 positive samples contaminated with Salmonella sp. (21,9%). ...
