Aplicação do Lean Manufacturing como ferramenta de otimização de processo em uma indústria alimentícia

Faced with a complex and competitive market, the food industries need the application of continuous improvement as a way to reduce costs and maximize revenues. Among the tools, we can mention Lean Manufacturing which aims to eliminate waste from the production lines. Situated in an adverse pandemic context, the potiguar industry of ice cream cones sought the implementation of this tool in its plant in order to be prepared for adverse scenarios. Thus, the present work describes the implementation of the improvement in the production process of cones using the Lean Manufacturing methodology and, for that, the Value Flow Map, analysis of lead time and takt time was carried out, being possible to identify the setup time. as a bottleneck in production. The reduction of this time was made possible through the implementation of 5S tools and Quick Tool Change. Achieving a reduction of about 60% of the programmed downtime and increasing productivity by about 5%. In addition, an improvement in the well-being of employees was achieved through the reduction of their daily physical wear and tear, as well as, they were empowered for being part of the Lean Manufacturing implementation process. Thus, the results obtained proved the effectiveness of the tool applied and it becomes a model for other industries in the industry. ; Diante de um mercado complexo e competitivo as indústrias de alimentos necessitam da aplicação da melhoria contínua como forma de reduzir custos e maximizar receitas.
