Análisis de las alteraciones de la cáscara del huevo de gallina ; Analysis of the alterations of the hen’s egg shell

La avicultura de puesta es uno de los sectores ganaderos más importantes en España, donde se consumen alrededor de 210 huevos por persona y año, dato que refleja la gran importancia social de este alimento. El consumidor está cada día más concienciado sobre la calidad y la seguridad alimentaria de los productos que consume. La calidad del huevo se determina por el control de su calidad interna y por la ausencia de defectos externos sobre la cáscara. Las alteraciones de la cáscara van a depender de varios factores: edad de la gallina, manejo y situaciones de estrés, nutri-ción y patologías. Estos factores van a tener una influencia en el aspecto externo del huevo y en su seguridad alimentaria, lo que, en definitiva, podría suponer su retirada de la cadena de consumo. Este artículo revisa la influencia de la fase productiva de la gallina en la incidencia de presentación de alteraciones en la cáscara de los huevos que vayan a causar una merma de su valor económico. ; Poultry farming is one of the most important livestock sectors in Spain, where about 210 eggs are consumed per person per year, a fact that reflects the great social importance of this food. The consumer is more and more aware of the quality and food safety of the products. The quality of the egg is determined by the control of its internal quality and by the absence of external defects on the shell. The alterations of the shell will depend on several factors: age of the hen, handling and situations of stress, nutrition, pathologies. These factors are going to have an influence on the external appearance of the egg and on its food security, which, in short, can mean its withdrawal from the consumption chain. This article makes a review of the influence of the productive phase of the hen in the incidence of presentation of alterations in the shell of the eggs, which will cause a decline in their economic value. ; Veterinaria
