Spray drying is widely used in that powder with low moisture content can be produced through a fast and easy process. Potential synbiotic products can be obtained through adding prebiotics as drying carrier used to increase drying efficiency. However, powders with small particle size by spray drying have disadvantages such as poor flowability, reconstitution properties, and storage stability in powder handling. Overcoming above-mentioned disadvantages through by high shear wet granulation has benefits such as easy to control process, fast process, and high recovery rate. The objective of this research is to enhance flowability, reconstitution properties, and storage stability through high shear wet granulation of inulin-based synbiotic powder. The powders with inulin or maltodextrin encapsulating LGG were obtained by spray drying. The three types of granules with different particle size fraction were obtained by high shear wet granulation of spray-dried synbiotic powder with adding inulin (50%, w/w) as a filler. The flowability and reconstitution properties (sinkability and dispersibility) of granules were enhanced by high shear wet granulation of spray-dried synbiotic powder. The solubility of granules was decreased due to inulin with relatively lower solubility. Granules with decreased contact angle meaning wettability of particle surface and increased critical water activity was observed. Based on these results, the high shear wet granulation enhancing flowability, reconstitution properties, and storage stability of granules were observed. ; 프로바이오틱스 제품에 대한 관심은 많은 건강한 기능을 가지고 있다는 점에서 커지고 있다. 분무건조는 낮은 수분을 갖는 분말을 빠르고 간편한 공정을 통해 생산할 수 있다는 점에서 많은 이용이 되고 있다. 건조 효율을 높이기 위해 사용되는 건조 보조제로 프리바이오틱스를 이용하게 된다면, 잠재적인 신바이오틱스 제품을 얻을 수 있다. 하지만, 작은 크기의 분말 입자는 흐름성, 재수화 특성, 저장 안정성이 불리하다. 높은 전단 혼합기는 간편한 조작, 빠른 공정, 높은 회수율을 갖는다는 점을 가지고 있는데, 작은 입자의 분말을 과립화하여 앞서 설명한 단점들을 극복할 수 있다. 본 연구에서는 신바이오틱스 ...
