      Prisutnost biogenih amina u školjkašima i ribi pokazatelj je svježine i kvalitete plodova mora i proizvoda od plodova mora za ljudsku konzumaciju. Cilj ovog rada bio je razviti analitičku metodu za određivanja 6 biogenih amina prisutnih u tkivu modelnog školjkaša, i to u tkivu dagnje te primijeniti razvijenu metodu za praćenje promjena koncentracije biogenih amina u tkivu dagnji pohranjenih kod različitih uvjeta kratkotrajnog skladištenja. U tu su svrhu ispitivani različiti pristupi ekstrakciji biogenih amina iz tkiva dagnji, metodama derivatizacije i separacije derivatizacijskih produkata primjenom tekućinske kromatografije visoke djelotvornosti. Razvijena metoda primijenjena je za ispitivanje utjecaja uvjeta skladištenja na stvaranje biogenih amina u tkivu dagnji i to pri različitim temperaturama i vremenima skladištenja. Indeks biogenih amina povećao se i s porastom temperature i duljinom skladištenja, dok je temperatura imala daleko veći utjecaj na porast koncentracije biogenih amina od vremena skladištenja pri istim temperaturnim uvjetima. ; Presence of biogenic amines in seashells, fish and seafood are considered as indicators of spoilage and/or quality of seafood for human consumption. The objective of this study was to develop an analytical method for determination of six biogenic amines present in mussel tissue of a model seashell and to apply this method to monitor changes in biogenic amine concentration during different storage conditions. For this purpose, different approaches for extraction, derivatization and separation of derivatization products by high-performance liquid chromatography was investigated. Developed method was used to investigate how storage conditions influence the development of biogenic amines at different temperatures over various storage times. Biogenic amine index increased as the storage time and temperature increased.
