نبذة مختصرة : This study measured the concentration of hydrogen peroxide, vitamin C and dicarbonyl molecules in honey samples from Ziziphus (10) and Acacia (20) and from different altitudes. Significant variations were reported between the Ziziphus and Acacia honeys in the case of the hydrogen peroxide and the dicarbonyl molecule concentrations (p- values = 0.004 and 0.007, respectively). The altitude significantly affected the studied parameters. Honeys rich in dicarbonyl molecules have a high concentration of vitamin C and low content of hydrogen peroxide.
