Change of Total Anthocyanin Contents and Antioxidant Activities of Purple Waxy Corn (Zea mays L.) Inbred Lines and Hybrids during Grain Filling.

      This study was carried out to compare the total anthocyanin contents and antioxyidant activities of black waxy inbred lines and hybrids of corn (Zea mays L.) at differnet harvest time from 2009 to 2011. In 2009, Total anthocyanin contents measured in 31 black waxy inbred lines of corn. The results indicated that KBW39 had, 173.3 mg/100g, the highest total anthocyanin contents of tested inbred lines while KBW22 had, 14.0 mg/100g, the lowest. Their hybrids were planted and harvested in 19, 21, 23, 25, and 45 days after pollination in 2010. Their total anthocyanin contents and antioxidant activities were increased as the delay of harvest time. Their correlation coefficient was 0.64. In 2011, hybrid combination KBW2/KBW39 had, 120 mg/100g, the highest total anthocyanin contents and their parent also had higher total anthocyanin contents than that of the other hybrids. Lightness and yellowness were decreased at late harvest time, but redness was not. Change of lightness at harvest time was bigger than that of redness and yellowness. Correlation between total anthocyanin contents and lightness was negative and their correlation coefficient was -0.8456 in 2010 and -0.9050 in 2011. [ABSTRACT FROM AUTHOR]
