The author recalls the annual meeting of the IFT which was held in July 2010. He believes that food technologists during this decade has already matured in terms of discoveries and product offerings. He was impressed with the number of exhibitors who were devoted to organic foods and ingredients. Some of the examples of organic products he cited include salt reducers, stevia derivatives and natural food colors.
