      The article provides an overview of the use of solid-phase microextraction (SPME) in the fish oil industry to monitor oxidation products in marine oils. It states that omega-3 fatty acids can be attached to triglycerides found in fish oil. It also provides information on the results of a study conducted by J. F. Cavalli and colleagues which found that SPME is the preferred method for the quality control of olive oil.
