      This article presents several methods used by pioneers in their storage of food. Underground storage or concrete blockhouses above the ground were used to keep food over the winter. Smoke houses were also used for storage of food when the smoking process was completed. Mason jars and hot water bath were used for acid foods such as tomatoes and pickles. For apple storage, a barrel was put halfway in the ground, covered with a leaf-filled burlap sack, and then covered with dirt and rocks. Salting, drying, or smoking were the means of preserving meat.
