      Food handlers in school canteens play a very significant role on food safety to students. Food that is safe to be served requires a competent and knowledgeable operator of food hygiene. The preparation of food in the school canteen must be kept in a safe condition to ensure that food poisoning does not occur. This study aims to determine the level of knowledge on food hygiene and safety of 100 food handlers in school canteens randomly selected from two (2) food handlers in 54 canteen premises throughout Ampang Selangor. The descriptive analysis conducted on the level of knowledge on the hygiene practices of operators while on duty shows that there is a relationship between knowledge and practice while on duty. Food handlers are assessed through practices and attitudes when handling food. Food handlers in school canteens need to be trained on clean food handling practices. Monitoring by school administrators, including the PTA, will yield better results on the level of hygiene practices in the preparation of food in the school canteen. The results show that the level of knowledge on hygiene is satisfactory. However, there is room for improvement that can still be improved to curb the incidence of food poisoning cases in school canteens. Food handlers need to be more sensitive to food safety knowledge that needs to be applied continuously in the school canteen to ensure the quality of food in the school canteen can be improved and to preserve the cleanliness and quality of food served to students.
