Special issue 1: Novel alternatives to traditional thermal processing in dairy manufacturing Guest Editor: Professor Adriano Gomes da Cruz, Federal Institute of Food Science and Technology, Brazil. Innovative novel food processing technologies for dairy food preservation are being developed, and this issue will consider whether they now offer a better alternative for preserving nutritional and sensory quality while still offering equivalent food safety.
